‘Boiled Fruit’ cake

This is an old family recipe from The Kitchen Mechanic.wordpress.com  (@SunnivaAnne if you follow twitter) but it is such a lovely moist fruit cake I thought it deserved showing off to you so you could see my photos of the cake making process.

Recipe

Put into a pan:

12ozs any mixed fruit (I used 4oz each of sultanas, raisins and chopped dates)

6ozs margarine

6ozs sugar (I used golden granulated)

Half pint of water.

Heat on the hob, bring to the boil and simmer for 10 minutes

Allow to cool then add 2 large beaten eggs to this mixture

Add this to 8ozs plain flour

1 teaspoon of bicarbonate of soda

½ teaspoon of ground ginger

1 teaspoon of mixed spice

Mix well together and pour this mixture into a lined loaf tin. Bake at  180° C  Electric oven or 160/170° C Fan oven or Gas mark 4  for 1¼ to 1½hour. Test with a skewer to see if it is cooked. This should come out cleanly with no mixture on when inserted into the cake.

The fruit plumps up really well with boiling it, resulting in a beautifully moist cake.

I will let you into a secret now.

The first time I made this cake I mistakenly only put a quarter of a pint of water in with the fruit and ended up with an awfully dry cake.

The second time the cake was moist but looking back I’m wondering now if I forgot to put something in. Did I put the eggs in? Don’t know now but this was a tasty cake but much heavier.

Today, third attempt, I have all the right ingredients in the right proportions. It does help when I read the recipe properly!

The cake is lovely.
